My parents used to serve this delicious dessert at dinner parties and now my husband, Kurt, and I just make it to indulge! We call this deluxe ice cream parfait “Green” which is fitting for St Patrick’s Day or any day! Fill a parfait glass with a few scoops of vanilla ice cream and pour Creme de Menthe over the ice cream layers. Make ahead and freeze for a delicious after dinner delight. Garnish with fresh mint leaves. Creme de Menthe has 25% alcohol by volume but there are non-alcoholic substitute syrups you can use instead.
